  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp tomato paste
  • 1 can (15 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 lasagna noodles, broken into pieces
  • ½ cup heavy cream
  • ½ cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil or parsley – to taste (optional toppings)
  • Extra mozzarella or Parmesan – to taste (optional toppings)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add onion and garlic, cooking for 2–3 minutes until softened and fragrant.
  3. Stir in Italian seasoning, paprika, salt, pepper, and tomato paste. Cook for 1 minute.
  4. Add crushed tomatoes and beef broth. Bring to a gentle boil.
  5. Stir in broken lasagna noodles, reduce heat, and simmer for 12–15 minutes until noodles are tender.
  6. Lower heat and stir in heavy cream, ricotta, mozzarella, and Parmesan until melted and creamy.
  7. Taste and adjust seasoning. Serve warm with optional toppings.

Notes

  • Tip: Break lasagna noodles into smaller pieces so they cook evenly in the soup.
  • You can substitute ground turkey for beef for a lighter version.
