  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth (halal)
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 1 package cheese tortellini (about 912 oz)
  • 1 cup baby spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • Optional: fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook for 4–5 minutes until softened.
  2. Stir in garlic and cook for 30 seconds until fragrant.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Add tortellini and cook according to package instructions, usually 5–7 minutes.
  5. Reduce heat to low and stir in heavy cream, Italian seasoning, salt, and pepper.
  6. Add spinach and cook for 1–2 minutes until wilted.
  7. Stir in Parmesan cheese until melted and creamy. Taste and adjust seasoning if needed.
  8. Serve warm, garnished with fresh parsley if desired.
