  • lbs beef chuck, cut into chunks (halal)
  • 4 carrots, sliced
  • 45 potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 2 bay leaves
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

Instructions

  1. Place beef, carrots, potatoes, onion, and garlic into the crockpot.
  2. In a bowl, whisk beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, pepper, and salt.
  3. Pour the broth mixture over the ingredients and add bay leaves.
  4. Cover and cook on low for 8 hours or on high for 4–5 hours, until beef is tender.
  5. For a thicker stew, stir in the cornstarch slurry during the last 30 minutes.
  6. Remove bay leaves and serve warm.
