Description

Easy Grilled Cheese Burrito Copycat Recipe is a cheesy, comforting, fast-food-inspired twist that you can make at home in minutes. Loaded with seasoned beef, fluffy rice, nacho cheese sauce, and a blend of cheddar and mozzarella, this warm burrito is easy to customize and perfect for lunch, dinner, or a satisfying snack. It crisps up beautifully in a skillet, delivers bold flavors, and yields four shareable portions for busy weeknights.

Ingredients

Scale
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 packet taco seasoning
  • ½ cup water
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • ½ cup nacho cheese sauce
  • Optional: sour cream or chopped lettuce for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  2. Stir in taco seasoning and water. Simmer for 5 minutes until thick and flavorful.
  3. Warm tortillas slightly so they’re easy to fold.
  4. Layer rice, seasoned beef, nacho cheese sauce, and a mix of cheddar and mozzarella in the center of each tortilla.
  5. Fold tortillas into burritos, tucking in the sides.
  6. Spoon a little shredded cheese into a clean skillet over medium heat. Place burritos seam-side down on the cheese and cook until cheese is melted and crispy. Flip and repeat on the other side.
  7. Serve warm and enjoy.

Notes

  • Warm tortillas slightly to prevent tearing when folding.
  • For extra flavor, use a blend of cheddar and pepper jack or cotija.
  • To save time, cook beef and rice ahead and assemble when ready.
  • Leftovers reheat well in a skillet or oven; freeze uncooked burritos for later.
