- 3 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 medium potatoes, cubed
- 3 tbsp tomato paste
- 4 cups beef broth
- 1 tbsp halal Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 bay leaves
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the beef on all sides until well browned. Remove and set aside.
- Add onion and carrots to the pot and cook 4–5 minutes. Stir in garlic and cook 30 seconds.
- Add tomato paste and cook for 1 minute to deepen flavor.
- Return the beef to the pot. Add potatoes, broth, halal Worcestershire, thyme, rosemary, paprika, salt, pepper, and bay leaves.
- Bring to a boil, then reduce heat, cover, and simmer for 2–2½ hours until the beef is tender.
- For a thicker stew, stir in the cornstarch slurry during the last 10 minutes.
- Taste and adjust seasoning.
- Remove bay leaves and garnish with fresh parsley before serving.

- Sear the beef well for deeper flavor and color.
- You can substitute with any affordable beef stew meat if halal options are unavailable.
- Adjust thickness by adding more slurry or broth to reach desired consistency.
