EASY HOMEMADE BEEF STEW is a warm, hearty one-pot classic featuring tender halal beef simmered with potatoes, carrots, onions and aromatics in a rich, savory broth. This cozy, family-friendly dish delivers comforting flavors with thyme, rosemary and paprika. Ideal for chilly nights, it thickens to a velvety gravy and rests beautifully for leftovers. Great for weeknights and gatherings alike.

Ingredients

Scale
  • 2 lbs halal beef stew meat, cut into chunks
  • 3 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 medium potatoes, cubed
  • 3 tbsp tomato paste
  • 4 cups beef broth
  • 1 tbsp halal Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 bay leaves
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef on all sides until well browned. Remove and set aside.
  2. Add onion and carrots to the pot and cook 4–5 minutes. Stir in garlic and cook 30 seconds.
  3. Add tomato paste and cook for 1 minute to deepen flavor.
  4. Return the beef to the pot. Add potatoes, broth, halal Worcestershire, thyme, rosemary, paprika, salt, pepper, and bay leaves.
  5. Bring to a boil, then reduce heat, cover, and simmer for 2–2½ hours until the beef is tender.
  6. For a thicker stew, stir in the cornstarch slurry during the last 10 minutes.
  7. Taste and adjust seasoning.
  8. Remove bay leaves and garnish with fresh parsley before serving.

Notes

  • Sear the beef well for deeper flavor and color.
  • You can substitute with any affordable beef stew meat if halal options are unavailable.
  • Adjust thickness by adding more slurry or broth to reach desired consistency.
  • Can be made in a slow cooker: brown meat and vegetables, then cook on Low 6–8 hours.
  • Store leftovers in the refrigerator up to 3–4 days or freeze for longer storage.
