- 1 lemongrass stalk, smashed (or 1 tsp lemongrass paste)
- 4 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 1 tbsp soy sauce or fish sauce (halal)
- 1 cup sliced mushrooms
- 1 red bell pepper, sliced
- 1 tbsp lime juice
- Fresh cilantro or basil for garnish
- Optional: chili flakes, sliced green onions, cooked rice or rice noodles
Instructions
- Heat oil in a pot over medium heat. Add onion and sauté 3 minutes.
- Add garlic, ginger, and red curry paste. Cook 1–2 minutes until fragrant.
- Add chicken and cook until lightly browned.
- Stir in chicken broth, coconut milk, lemongrass, mushrooms, and bell pepper.
- Simmer 10–12 minutes until chicken is cooked and flavors meld.
- Add soy sauce or halal fish sauce and lime juice.
- Remove lemongrass stalk, adjust seasoning, and garnish with herbs.
- Serve alone or over rice/noodles for a heartier meal.
Notes
- Can be made dairy-free by using coconut milk only (no dairy).
- For a spicier soup, add chili flakes to taste.
