Description

Ingredients

  • 2 packs instant ramen noodles (discard seasoning)
  • 1 tbsp oil
  • 2 cups cooked chicken breast or thighs, shredded
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp sriracha (adjust to taste)
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 2 green onions, sliced
  • Optional toppings: soft-boiled egg, sesame seeds, chopped cilantro

Instructions

  1. Cook ramen noodles according to package instructions. Drain and set aside.
  2. Heat oil in a large skillet over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
  3. Stir in the gochujang, soy sauce, sriracha, and chicken broth. Simmer for 2–3 minutes.
  4. Add shredded chicken and cook until heated through.
  5. Reduce heat to low, stir in the heavy cream and cooked noodles. Toss to coat everything in the sauce.
  6. Cook for 1–2 more minutes until creamy and well combined.
  7. Serve hot, garnished with green onions and your choice of toppings.

Notes

  • You can use leftover rotisserie chicken for convenience.
  • For gluten-free, use gluten-free ramen and gluten-free soy sauce.
  • Adjust spice level by adding more or less gochujang or sriracha.
  • For a thicker sauce, simmer a bit longer or whisk in an extra splash of cream.
  • To lighten the dish, substitute half-and-half or milk for heavy cream.
  • Dairy-free option: replace cream with coconut cream and use dairy-free broth.
