Ingredients
Scale
- 6 bone-in or boneless chicken thighs
- 2 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- ½ cup chicken broth
- 1 cup heavy cream
- 2 tbsp Dijon mustard
- 1 tbsp whole grain mustard (optional)
- 1 tsp dried thyme
- ½ tsp black pepper
- ½ tsp salt
- Fresh parsley for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken on both sides until golden. Remove and set aside.
- Add the onion to the skillet and cook for 3–4 minutes until softened.
- Stir in the garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any browned bits.
- Whisk in Dijon mustard, whole grain mustard (if using), thyme, and heavy cream.
- Return the chicken to the skillet, nestling it into the sauce.
- Reduce heat to medium-low and simmer for 25–30 minutes, or until the chicken is tender and the sauce thickens.
- Taste and adjust seasoning. Garnish with fresh parsley and serve warm.
Notes
- You can use skin-on or skinless thighs; skin adds flavor but remove if you prefer.
- For a lighter version, substitute half-and-half or a lower-fat cream.
- If the sauce thickens too quickly, whisk in a splash of extra broth or cream.
- Pairs well with rice, mashed potatoes, or crusty bread.
