  • 1 lb chicken breasts, cut into bite-size pieces
  • 1 large onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 1 cup shredded mozzarella or Gruyère cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large oven-safe skillet over medium heat. Add chicken and cook until lightly browned. Remove and set aside.
  2. Add sliced onions to the pan and cook until deeply caramelized, 10–12 minutes.
  3. Stir in garlic and cook for 30 seconds.
  4. Add the orzo, chicken broth, milk or cream, thyme, paprika, salt, and pepper.
  5. Return the chicken to the skillet and stir everything together.
  6. Bring to a simmer, then cover and cook for 8–10 minutes, stirring occasionally, until the orzo is tender.
  7. Sprinkle cheese evenly over the top.
  8. Transfer the skillet to the oven and broil for 2–3 minutes, or until the cheese is melted and bubbly.
  9. Garnish with parsley and serve warm.
