  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) French onion soup
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1½ cups shredded mozzarella or Swiss-style cheese
  • ½ cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  3. Add onion and garlic and sauté for 2–3 minutes until softened.
  4. Stir in uncooked rice, beef broth, French onion soup, garlic powder, and black pepper. Mix well.
  5. Transfer mixture to the prepared baking dish and cover tightly with foil.
  6. Bake for 40 minutes.
  7. Remove foil, sprinkle mozzarella and cheddar cheese evenly over the top, and return to oven uncovered.
  8. Bake an additional 15–20 minutes until rice is tender and cheese is melted and bubbly.
  9. Let rest for 5 minutes before serving.

Notes

  • You can assemble this casserole ahead of time and refrigerate before baking.
  • Use mozzarella and cheddar or swap in Swiss cheese for a sharper bite.
  • To lighten it, use part-skim cheese and lean ground beef.
  • Let the casserole rest 5 minutes before serving to help it set.
