- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (10.5 oz) French onion soup
- 1 tsp garlic powder
- ½ tsp black pepper
- 1½ cups shredded mozzarella or Swiss-style cheese
- ½ cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
- Add onion and garlic and sauté for 2–3 minutes until softened.
- Stir in uncooked rice, beef broth, French onion soup, garlic powder, and black pepper. Mix well.
- Transfer mixture to the prepared baking dish and cover tightly with foil.
- Bake for 40 minutes.
- Remove foil, sprinkle mozzarella and cheddar cheese evenly over the top, and return to oven uncovered.
- Bake an additional 15–20 minutes until rice is tender and cheese is melted and bubbly.
- Let rest for 5 minutes before serving.

- You can assemble this casserole ahead of time and refrigerate before baking.
- Use mozzarella and cheddar or swap in Swiss cheese for a sharper bite.
