- 3 cups cooked mac and cheese (cooled and firm)
- 1 cup shredded cheddar cheese (optional for extra cheesiness)
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1½ cups seasoned breadcrumbs
- Vegetable oil, for frying
Instructions
- Scoop about 1–2 tablespoons of cold mac and cheese and roll into firm balls. Place on a tray and freeze for 30 minutes.
- Optional: Mix in extra shredded cheese to the mac before forming balls for extra gooey centers.
- Set up a dredging station: one bowl with flour, one with beaten eggs, and one with breadcrumbs.
- Roll each ball in flour, then egg, then breadcrumbs. Press gently to help coating stick.
- Heat oil in a deep pan to 350°F (175°C). Fry bites in small batches for 2–3 minutes, or until golden and crispy.
- Remove with a slotted spoon and drain on paper towels. Serve hot with dipping sauces like ranch or marinara.
