Description

Garlic Butter Shrimp Scampi Pasta is a rich, crowd-pleasing pasta dish featuring juicy shrimp, al dente linguine, and a silky garlic butter cream sauce. This 40-minute stovetop favorite delivers bold lemon brightness, Parmesan cheesiness, and a touch of heat—perfect for cozy weeknights or entertaining. Make it in one skillet, reserve pasta water to loosen the sauce, and finish with parsley for a glossy, restaurant-worthy finish.

Ingredients

Scale
  • 1 lb pasta (linguine or spaghetti)
  • 2 lbs shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 5 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp red pepper flakes (optional)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh lemon juice
  • Optional: chopped parsley for garnish

Instructions

  1. Cook pasta in salted water according to package instructions. Reserve ½ cup pasta water, then drain.
  2. Heat olive oil and 2 tbsp butter in a large skillet over medium heat.
  3. Add shrimp, season with salt, pepper, paprika, and red pepper flakes if using. Cook 1–2 minutes per side until pink. Remove and set aside.
  4. In the same skillet, melt remaining butter and add garlic. Cook for 30 seconds until fragrant.
  5. Pour in chicken broth and simmer for 2–3 minutes, scraping up any browned bits.
  6. Stir in heavy cream and Parmesan cheese, cooking until the sauce is smooth and slightly thickened.
  7. Add cooked pasta and shrimp back to the skillet, tossing to coat. Add reserved pasta water if needed.
  8. Finish with lemon juice, garnish if desired, and serve warm.

Notes

  • Reserve pasta water to adjust sauce consistency as needed.
  • Red pepper flakes are optional for a touch of heat.
  • Parsley garnish adds color and freshness.
  • For a lighter version, use half-and-half instead of heavy cream and reduce butter slightly.
