  • 2 packs ramen noodles, seasoning packets discarded
  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, sliced
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup shredded carrots
  • 3 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 tbsp soy sauce
  • ½ tsp black pepper
  • 2 green onions, sliced

Instructions

  1. Cook ramen noodles according to package directions without seasoning packets. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add sliced chicken and cook for 5–6 minutes until golden and fully cooked. Remove and set aside.
  3. In the same pan, add mushrooms and carrots. Sauté for 3–4 minutes until slightly tender.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and bring to a gentle simmer.
  6. Stir in heavy cream, parmesan cheese, soy sauce, and black pepper. Simmer for 4–5 minutes until slightly thickened.
  7. Return cooked chicken to the pan and add drained noodles. Toss until evenly coated in the creamy garlic sauce.
  8. Garnish with sliced green onions and serve warm.
