- 2 lbs ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 large eggs
- 1/2 cup milk
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 3 tbsp melted butter
- 2 tbsp grated Parmesan
- 1 tsp garlic powder
- 1 tsp dried parsley
Instructions
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease it.
- In a large bowl, mix ground chicken, breadcrumbs, Parmesan, onion, garlic, eggs, milk, Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper until well combined.
- Transfer the mixture to the loaf pan and shape evenly.
- Bake for 45 minutes.
- In a small bowl, mix melted butter, Parmesan, garlic powder, and parsley.
- Brush the topping over the meatloaf and bake an additional 10–15 minutes until golden and cooked through.
- Let rest 5–10 minutes before slicing and serving.
