Ingredients

  • 8 oz fettuccine or pasta of choice
  • 2 tbsp olive oil
  • 2 chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • ½ tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked, about 6–7 minutes. Remove and set aside.
  3. In the same skillet, reduce heat to medium. Add garlic and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan, Italian seasoning, and red pepper flakes (if using).
  5. Once the sauce thickens slightly, add the cooked chicken back in.
  6. Toss in the drained pasta and stir until everything is well coated.
  7. Garnish with chopped parsley and serve warm.

Notes

  • You can use gluten-free pasta if needed.
  • For a lighter version, substitute half-and-half or milk for part of the heavy cream (note: flavor and richness will be reduced).
  • If the sauce gets too thick, loosen it with a splash of reserved pasta water.
