- 8 oz fettuccine or pasta of choice
- 2 tbsp olive oil
- 2 chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 4 garlic cloves, minced
- 1 cup heavy cream
- ¾ cup grated Parmesan cheese
- ½ tsp Italian seasoning
- ¼ tsp red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked, about 6–7 minutes. Remove and set aside.
- In the same skillet, reduce heat to medium. Add garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan, Italian seasoning, and red pepper flakes (if using).
- Once the sauce thickens slightly, add the cooked chicken back in.
- Toss in the drained pasta and stir until everything is well coated.
- Garnish with chopped parsley and serve warm.
Notes
- You can use gluten-free pasta if needed.
- For a lighter version, substitute half-and-half or milk for part of the heavy cream (note: flavor and richness will be reduced).
- If the sauce gets too thick, loosen it with a splash of reserved pasta water.
- Add extra garlic or red pepper flakes for more heat.
- Best served immediately for maximum creaminess.
