Ingredients

  • 1 tbsp fresh ginger, minced
  • 3 garlic cloves, minced
  • 6 cups chicken broth (low sodium)
  • 2 cups cooked shredded chicken (halal)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar (or lemon juice)
  • 1 tsp chili garlic sauce (optional, for heat)
  • 4 oz rice noodles or egg noodles
  • 1 cup sliced carrots
  • 1 cup baby spinach or bok choy
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Optional: fresh cilantro or lime wedges for garnish

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add ginger and garlic and sauté for 1-2 minutes until fragrant.
  2. Pour in chicken broth and bring to a gentle boil. Stir in soy sauce, vinegar, and chili garlic sauce (if using).
  3. Add carrots and simmer for 5-6 minutes until slightly tender.
  4. Stir in shredded chicken and noodles. Cook for 5-6 minutes, or until noodles are tender.
  5. Add spinach or bok choy and cook for 1 more minute until wilted.
  6. Taste and adjust seasoning with salt and pepper.
  7. Serve hot, topped with green onions and optional cilantro or lime.

Notes

  • For a gluten-free version, use gluten-free noodles and tamari instead of soy sauce.
  • Adjust heat by varying the chili garlic sauce or omitting it.
