- 1 tbsp sesame oil or vegetable oil
- 1 tbsp fresh ginger, minced
- 3 garlic cloves, minced
- 6 cups chicken broth (low sodium)
- 2 cups cooked shredded chicken (halal)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar (or lemon juice)
- 1 tsp chili garlic sauce (optional, for heat)
- 4 oz rice noodles or egg noodles
- 1 cup sliced carrots
- 1 cup baby spinach or bok choy
- 2 green onions, sliced
- Salt and pepper to taste
- Optional: fresh cilantro or lime wedges for garnish
Instructions
- In a large pot, heat sesame oil over medium heat. Add ginger and garlic and sauté for 1-2 minutes until fragrant.
- Pour in chicken broth and bring to a gentle boil. Stir in soy sauce, vinegar, and chili garlic sauce (if using).
- Add carrots and simmer for 5-6 minutes until slightly tender.
- Stir in shredded chicken and noodles. Cook for 5-6 minutes, or until noodles are tender.
- Add spinach or bok choy and cook for 1 more minute until wilted.
- Taste and adjust seasoning with salt and pepper.
- Serve hot, topped with green onions and optional cilantro or lime.
Notes
- For a gluten-free version, use gluten-free noodles and tamari instead of soy sauce.
- Adjust heat by varying the chili garlic sauce or omitting it.
- Use low-sodium broth to keep sodium in check.
