  • 1 tsp baking soda

  • ¾ cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ cup granulated sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger

Instructions

  1. In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Scoop into small teaspoons and freeze 30 minutes.
  2. In a bowl, whisk flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  3. In another bowl, cream butter and brown sugar until fluffy. Beat in molasses, egg, and vanilla.
  4. Gradually mix in dry ingredients until dough forms. Chill dough 1 hour.
  5. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Mix spiced sugar ingredients in a small bowl.
  7. Scoop cookie dough, flatten slightly, place a frozen cheesecake ball in the center, wrap dough around it, and roll in spiced sugar.
  8. Place on baking sheet and bake 11–14 minutes until set.
  9. Cool on the pan for 10 minutes before transferring to a rack to cool completely.
