  • ½ cup powdered sugar, for rolling

Instructions

  1. In a large bowl, cream together butter and brown sugar until light and fluffy.
  2. Add egg, molasses, and vanilla extract, mixing until fully combined.
  3. In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  4. Gradually mix dry ingredients into wet ingredients until a soft dough forms.
  5. Chill dough for 1 hour to make it easier to handle.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll dough into balls, roll in granulated sugar, then generously coat in powdered sugar.
  8. Place on baking sheets, spacing apart.
  9. Bake for 10–12 minutes until cookies spread and crinkle.
  10. Cool slightly before serving.
