Description

Guinness Beef Stew is a rich, halal Irish-style beef stew with deep, comforting flavor and no alcohol. Tender halal beef braises with carrots, parsnips, and potatoes in a robust broth built from beef stock and a non-alcoholic dark malt drink to mimic Guinness depth. This hearty dish is perfect for cold nights or St. Patrick’s celebrations, finished with fresh parsley for a bright, satisfying finish.

  • 2 lbs halal beef stew meat, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 2 parsnips, sliced
  • 3 medium potatoes, cubed
  • 4 cups beef broth
  • 1½ cups non-alcoholic dark malt beverage (halal Guinness-style swap)
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tbsp flour (optional for thickening)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
  2. In the same pot, add the onion and cook until soft. Stir in the garlic and cook for 1 minute.
  3. Add the tomato paste and flour (if using) and cook for another minute.
  4. Pour in the non-alcoholic dark malt beverage and beef broth, scraping up browned bits from the bottom.
  5. Return the beef to the pot, then add carrots, parsnips, potatoes, thyme, rosemary, and bay leaf.
  6. Bring to a simmer, cover, and cook on low for 1½–2 hours, stirring occasionally, until the beef is tender and the broth thickens.
  7. Remove the bay leaf and adjust seasoning.
  8. Garnish with fresh parsley and serve warm with crusty bread or mashed potatoes.

Notes

  • Gluten-free option: omit flour or use a gluten-free thickener (like a cornstarch slurry).
  • For a thicker broth, simmer a bit longer or whisk in a little extra flour mixed with water (if using).
  • Let leftovers rest for 10–15 minutes to meld flavors.
  • If you can’t find a halal non-alcoholic dark malt beverage, substitute with extra beef broth and a splash of molasses to mimic depth.
  • Serve with crusty bread or mashed potatoes and garnish with chopped fresh parsley.
