Halloween Eyeball Pasta Salad is a spooky, bold pasta salad featuring mozzarella eyeballs and festive colors—perfect for Halloween parties.

- 8 oz rotini pasta (tri-color or plain)
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/2 cup cucumbers, diced
- 1/2 cup Italian dressing (store-bought or homemade)
- 1 tsp dried oregano
- Salt and pepper to taste
- 10–12 small mozzarella balls (bocconcini or ciliegine)
- 10–12 sliced black olives
- Ketchup or sriracha (for bloodshot effect, optional)
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine cooked pasta, tomatoes, olives, red onion, and cucumber.
- Pour in Italian dressing and sprinkle with oregano, salt, and pepper. Toss well to coat.
- To make the eyeballs, press one olive slice into the center of each mozzarella ball. Use a toothpick dipped in ketchup or sriracha to add veins if desired.
- Gently place the eyeball mozzarella balls on top of the pasta salad before serving.
- Chill until ready to serve for best flavor.
Notes
- Best served chilled for the flavors to meld.
- Can be prepared up to assembly a day ahead; store components separately and combine just before serving.
- For a lighter version, reduce the Italian dressing or use a vinaigrette.
