  • 2 tbsp brown sugar

  • 1 cup brown sugar
  • 3 large eggs

  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/2 tsp butter extract (optional)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Mix graham crumbs, melted butter, and brown sugar; press firmly into the bottom of a springform pan.
  3. Beat the cream cheese until smooth; add brown sugar and beat until creamy.
  4. Beat in eggs one at a time.
  5. Stir in butterscotch sauce, heavy cream, vanilla, butter extract, and salt; blend until smooth.
  6. Pour filling over the crust.
  7. Bake 55 to 65 minutes until edges are set and center jiggles slightly.
  8. Turn off oven, crack the door, and let the cheesecake cool inside for 1 hour to prevent cracking.
  9. Chill at least 4 hours or overnight.
