  • lbs boneless, skinless chicken breasts or thighs
  • lbs baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • ½ tsp dried thyme
  • ½ cup chicken broth
  • ¾ cup grated Parmesan cheese
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Add potatoes to the bottom of the crockpot in an even layer.
  2. Place chicken on top of the potatoes.
  3. In a bowl, mix melted butter, garlic, salt, pepper, garlic powder, parsley, and thyme.
  4. Pour the garlic butter mixture evenly over the chicken and potatoes.
  5. Add chicken broth around the sides.
  6. Cover and cook on low for 6 hours or until chicken is tender and potatoes are fork-tender.
  7. Sprinkle Parmesan cheese over the top, cover, and cook for an additional 15 minutes until melted.
  8. Spoon sauce over everything, garnish if desired, and serve warm.
