  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • Salt to taste
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken or beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup small pasta (orzo or ditalini)
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper to taste
  • Optional: fresh parsley or extra Parmesan for serving

Instructions

  1. In a bowl, mix all meatball ingredients until just combined. Roll into small meatballs and set aside.
  2. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
  3. Pour in broth and diced tomatoes. Stir in Italian seasoning, paprika, salt, and pepper. Bring to a gentle boil.
  4. Carefully add meatballs to the pot. Reduce heat and simmer 15 minutes.
  5. Add pasta and cook another 8–10 minutes until tender and meatballs are cooked through.
  6. Taste and adjust seasoning. Serve hot with parsley or Parmesan if desired.
