- 2 garlic cloves, minced

- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken or beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup small pasta (orzo or ditalini)
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and pepper to taste
- Optional: fresh parsley or extra Parmesan for serving
Instructions
- In a bowl, mix all meatball ingredients until just combined. Roll into small meatballs and set aside.
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
- Pour in broth and diced tomatoes. Stir in Italian seasoning, paprika, salt, and pepper. Bring to a gentle boil.
- Carefully add meatballs to the pot. Reduce heat and simmer 15 minutes.
- Add pasta and cook another 8–10 minutes until tender and meatballs are cooked through.
- Taste and adjust seasoning. Serve hot with parsley or Parmesan if desired.
