  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 2 chicken breasts, poached and shredded
  • 1 tsp dried thyme
  • ½ tsp dried parsley
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 bay leaf
  • 1 cup diced potatoes or parsnips (optional)
  • Juice of ½ lemon (optional)
  • Fresh parsley for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth, then add shredded poached chicken, thyme, parsley, salt, pepper, bay leaf, and potatoes if using.
  4. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until vegetables are tender.
  5. Remove bay leaf and adjust seasoning.
  6. Stir in a splash of lemon juice for brightness if desired.
