Description
Honey BBQ Chicken Rice is a savory, 4-serving skillet dish where juicy chicken is glazed in a sticky honey BBQ sauce over fluffy rice.
Ingredients
Scale
- 500g boneless, skinless chicken thighs
- 1 tbsp olive oil
- Salt and pepper, to taste
- ½ tsp smoked paprika
- 1 tsp garlic powder
- ½ cup honey
- ½ cup halal BBQ sauce
- 2 cups cooked white or brown rice
- Chopped green onions or parsley (for garnish)
Instructions
- Season chicken thighs with salt, pepper, smoked paprika, and garlic powder.
- Heat olive oil in a pan over medium heat. Add chicken and cook for 5–6 minutes on each side until golden and cooked through.
- In a bowl, mix honey and BBQ sauce. Pour over chicken and cook for another 3–4 minutes, letting the sauce bubble and thicken.
- Remove chicken, slice or shred as desired.
- Serve over warm rice, spooning extra sauce on top. Garnish with chopped green onions or parsley.
Notes
- You can substitute chicken thighs with breasts, but thighs stay juicier.
- Adjust honey to taste for sweeter or milder sauce.
- For a thicker glaze, simmer the sauce a little longer before returning the chicken to the pan.
- Leftovers can be stored in the fridge for 2–3 days.
