Description
Italian Herbs and Cheese Bread: a soft, golden loaf bursting with melted mozzarella, parmesan, and savory Italian herbs.
Ingredients

- 3 cups all-purpose flour
- 1 tbsp sugar
- 2¼ tsp instant yeast (1 packet)
- 1 tsp salt
- 1 cup warm water (110°F)
- 2 tbsp olive oil
- 1 cup shredded mozzarella cheese
- ½ cup shredded parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp garlic powder
- Optional: ½ tsp crushed red pepper flakes
Instructions
- In a large bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
- Stir in olive oil, salt, and 2½ cups of flour. Mix until dough forms.
- Turn onto a floured surface and knead for 6–8 minutes, adding more flour as needed until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled.
- Punch down dough and knead in mozzarella, parmesan, and herbs.
- Shape into a loaf and place in a greased 9×5-inch pan. Cover and let rise again for 30 minutes.
- Preheat oven to 375°F (190°C).
- Bake for 30–35 minutes or until golden brown and sounds hollow when tapped.
- Let cool slightly before slicing and serving warm.
Notes
- For a milder flavor, omit the crushed red pepper flakes.
- You can mix in shredded provolone or fontina for a different cheese profile.
- Brush the loaf with a little olive oil or butter after baking for a softer crust.
- Leftovers can be wrapped and frozen; rewarm slices in the oven for best texture.
