  • 1 tbsp olive oil
  • 1 lb halal Italian-style chicken or turkey sausage, removed from casings
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 medium carrot, chopped
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 package (16 oz) potato gnocchi
  • 2 cups fresh spinach leaves
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • ¼ cup grated Parmesan cheese (optional, or halal-certified cheese)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart with a spoon. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrot, and celery until softened, about 5 minutes.
  3. Pour in chicken broth and bring to a gentle boil. Add gnocchi and cook according to package instructions (about 3–4 minutes).
  4. Reduce heat to low. Stir in cooked sausage, heavy cream, Italian seasoning, and crushed red pepper flakes. Simmer for 5–7 minutes until thickened slightly.
  5. Stir in spinach and cook just until wilted. Season with salt and pepper to taste.
  6. Serve hot with a sprinkle of Parmesan cheese and warm garlic bread on the side.

Notes

  • For dairy-free, use coconut cream in place of heavy cream.
  • Adjust the red pepper flakes to taste for more or less heat.
  • Parmesan cheese is optional and can be replaced with halal-certified alternatives.
  • Leftovers refrigerate well for 3–4 days. Reheat gently on the stovetop.
