- 1 lb halal Italian-style chicken or turkey sausage, removed from casings
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 medium carrot, chopped
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream (or coconut cream for dairy-free)
- 1 package (16 oz) potato gnocchi
- 2 cups fresh spinach leaves
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes (optional)
- Salt and black pepper to taste
- ¼ cup grated Parmesan cheese (optional, or halal-certified cheese)
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart with a spoon. Remove and set aside.
- In the same pot, sauté onion, garlic, carrot, and celery until softened, about 5 minutes.
- Pour in chicken broth and bring to a gentle boil. Add gnocchi and cook according to package instructions (about 3–4 minutes).
- Reduce heat to low. Stir in cooked sausage, heavy cream, Italian seasoning, and crushed red pepper flakes. Simmer for 5–7 minutes until thickened slightly.
- Stir in spinach and cook just until wilted. Season with salt and pepper to taste.
- Serve hot with a sprinkle of Parmesan cheese and warm garlic bread on the side.
Notes
- For dairy-free, use coconut cream in place of heavy cream.
- Adjust the red pepper flakes to taste for more or less heat.
- Parmesan cheese is optional and can be replaced with halal-certified alternatives.
