  • 1 small onion, diced

  • ½ teaspoon smoked paprika
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • 5 cups halal gluten-free chicken broth
  • 2 cans cannellini beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Cook for 4–5 minutes until softened.
  3. Stir in garlic, Italian seasoning, smoked paprika, salt, and black pepper. Cook for 30 seconds until fragrant.
  4. Pour in chicken broth, cannellini beans, and diced tomatoes. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes to let flavors develop.
  6. Stir in cooked sausage and fresh spinach. Cook for 2–3 minutes until spinach is wilted.
  7. Taste and adjust seasoning as needed. Serve warm with optional cheese on top.
