- 1 lb ground halal beef or turkey
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cauliflower florets, chopped small
- 1 cup shredded zucchini (squeeze out moisture)
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp mustard
- 1 tsp smoked paprika
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp pepper
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 4 oz cream cheese, softened
- Optional toppings: chopped turkey bacon, diced pickles, extra cheese
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add ground meat and cook until browned.
- Stir in the onion and garlic and sauté until softened, about 3–4 minutes.
- Add cauliflower, zucchini, broth, tomato paste, mustard, paprika, onion powder, salt, and pepper. Stir to combine.
- Bring to a simmer and cook for 15–20 minutes, until vegetables are tender.
- Lower heat and stir in cream cheese until melted.
- Add heavy cream and shredded cheese, stirring until smooth and creamy.
- Serve hot with your favorite keto toppings.
