Keto Cheeseburger Soup is a creamy, comforting, low-carb dish that captures the indulgence of a cheeseburger without the carbs.


Ingredients

  • 1 lb ground halal beef or turkey
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cauliflower florets, chopped small
  • 1 cup shredded zucchini (squeeze out moisture)
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp mustard
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 4 oz cream cheese, softened
  • Optional toppings: chopped turkey bacon, diced pickles, extra cheese

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add ground meat and cook until browned.
  2. Stir in the onion and garlic and sauté until softened, about 3–4 minutes.
  3. Add cauliflower, zucchini, broth, tomato paste, mustard, paprika, onion powder, salt, and pepper. Stir to combine.
  4. Bring to a simmer and cook for 15–20 minutes, until vegetables are tender.
  5. Lower heat and stir in cream cheese until melted.
  6. Add heavy cream and shredded cheese, stirring until smooth and creamy.
  7. Serve hot with your favorite keto toppings.
