  • lbs ground beef or ground turkey
  • 1 cup breadcrumbs
  • 1 large egg
  • ½ cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 3 cups mashed potatoes (prepared or leftover)
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
  • 2 tbsp butter, melted
  • 1 cup shredded cheddar or mozzarella cheese
  • Optional: chopped green onions or parsley

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, mix all meatloaf ingredients until just combined.
  3. Press meatloaf mixture evenly into the bottom of the baking dish.
  4. Bake uncovered for 25 minutes.
  5. While baking, stir mashed potatoes with sour cream, melted butter, and shredded cheese until smooth.
  6. Remove meatloaf from oven and carefully spread mashed potatoes evenly over the top.
  7. Sprinkle additional cheese over the potatoes.
  8. Return to oven and bake for 20–25 minutes until heated through and cheese is melted and lightly golden.
