Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and cook until softened, about 4 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Add chicken broth, heavy cream, and cream cheese. Stir until the cream cheese melts and the mixture becomes smooth.
