Description

Low Carb Crack Chicken Soup is a creamy, cheesy comfort bowl perfect for keto and low-carb lifestyles. Tender shredded chicken swims in a silky cream cheese and heavy cream broth, enriched with ranch seasoning and melty cheddar. Crispy turkey bacon adds smoky crunch, while spinach adds color and nutrition. This one-pot soup comes together in under 40 minutes and reheats beautifully for meal prep dinners with restaurant-worthy flavor without the carbs.

Ingredients

Scale
  • 1 tbsp olive oil
  • 6 slices turkey bacon, cooked and crumbled
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 2 cups cooked shredded chicken
  • 1 tbsp ranch seasoning (homemade or store-bought)
  • 1 cup shredded cheddar cheese
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 cup chopped spinach or kale
  • Optional: sliced green onions for topping

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and cook until softened, about 4 minutes.
  2. Stir in garlic and cook for 1 minute until fragrant.
  3. Add chicken broth, heavy cream, and cream cheese. Stir until the cream cheese melts and the mixture becomes smooth.
  4. Add shredded chicken, ranch seasoning, cheddar cheese, pepper, paprika, and crumbled turkey bacon (reserve a bit for topping if desired).
  5. Simmer for 10–15 minutes on low heat, stirring occasionally.
  6. Add spinach or kale and cook just until wilted.
  7. Ladle into bowls and top with extra cheese, turkey bacon, and green onions if desired.

Notes

  • Make it dairy-rich or lighter by adjusting the cream cheese and cream amounts.
  • Store leftovers in airtight containers for up to 3-4 days; refrigerate promptly.
  • For thicker soup, whisk in more cream cheese or simmer uncovered to reduce slightly.
