  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 6 cups chicken broth
  • 2 cups cooked shredded halal chicken
  • ½ cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Optional: red pepper flakes for heat, fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté 5–6 minutes until softened.
  3. Stir in garlic, paprika, Italian seasoning, pepper, and salt; cook for 1 minute.
  4. Pour in chicken broth and bring to a simmer.
  5. Add shredded chicken and sun-dried tomatoes; simmer for 10 minutes.
  6. Reduce heat and stir in heavy cream and Parmesan until melted and smooth.
  7. Add spinach and cook 2–3 minutes until wilted.
  8. Taste and adjust seasoning. Garnish with basil or red pepper flakes if desired.
