Description

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ¼ cup grated Parmesan
  • ¼ cup flour
  • 2 green onions, finely sliced
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Optional: extra shredded cheese for topping

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin pan.
  2. In a mixing bowl, combine mashed potatoes, cheddar, eggs, Parmesan, flour, green onions, garlic powder, paprika, salt, and pepper.
  3. Mix until smooth and well combined.
  4. Spoon the mixture into the mini muffin pan, filling each cup almost to the top.
  5. Add a pinch of extra cheese to each cup if you want extra-cheesy puffs.
  6. Bake 20–25 minutes, or until golden, puffed, and crispy on the edges.
  7. Cool slightly before removing from the pan and serve warm.
