- 2 tbsp olive oil
- 1 lb chicken breasts, cut into strips or cubes
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp paprika
- ½ tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded Mexican blend or cheddar cheese
- 1 cup heavy cream
- ½ cup chicken broth
- 2 tbsp cream cheese
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat. Add the chicken and season with chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Cook for 6–8 minutes until the chicken is golden and fully cooked through. Remove and set aside.
- In the same skillet, add the chicken broth and bring to a simmer. Stir in cream cheese until melted.
- Add heavy cream and shredded cheese. Stir until smooth and thickened into a creamy sauce.
- Return chicken to the skillet and toss to coat in the cheese sauce. Simmer for 2–3 minutes.
- Garnish with chopped cilantro and serve hot with rice, tortillas, or over pasta.
Notes
- Leftovers reheat well and pair nicely with rice or tortillas.
- To lighten, use part-skim cheese and half-and-half instead of heavy cream.
