Description

Mit Tacos gefüllte Süßkartoffeln: A Mexican-inspired, taco-stuffed sweet potato dish that makes a hearty, healthy weeknight dinner.


Ingredients

  • 2 large sweet potatoes
  • 250 g ground beef (or Halal turkey mince)
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp chili powder (to taste)
  • Salt and pepper to taste
  • 100 g corn, drained
  • 100 g black beans, rinsed and drained
  • 50 g grated cheese (Cheddar or Gouda)
  • Fresh cilantro or parsley for garnish
  • Yogurt or Halal sour cream for serving
  • Optional: lime wedges, avocado cubes, jalapeños

Instructions

  1. Preheat the oven to 200°C (conventional bake). Pierce the sweet potatoes with a fork and place on a baking sheet. Bake for 40–50 minutes until tender.
  2. Meanwhile, in a pan, cook the ground beef with a little oil. Add onion and garlic and sauté until translucent. Stir in the spices and mix well.
  3. Add the corn and black beans and sauté briefly until heated through. Season with salt and pepper.
  4. Slice the baked potatoes lengthwise and gently press them open.
  5. Pack the taco filling into the potatoes and top with cheese. Return to the oven for 5 minutes, until the cheese melts.
  6. Serve with yogurt or Halal sour cream, fresh herbs, and any extra toppings you like.

  • For a lighter version, use lean ground turkey or another Halal meat.
  • Gluten-free recipe as written.
  • Adjust chili powder to taste for more or less heat.
  • You can prep the filling ahead and reheat when ready to serve.
