  • 2 lbs halal beef stew meat, cut into chunks
  • 3 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, cubed
  • 3 tbsp tomato paste
  • 6 cups beef broth
  • 1 tbsp Worcestershire sauce (halal)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp flour (optional for thicker broth)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
  2. Add onion, carrots, and celery to the pot. Cook for 5 minutes until softened.
  3. Stir in the garlic and tomato paste. Cook for 1 minute.
  4. Add the flour (if using) and stir to coat.
  5. Pour in the beef broth and Worcestershire sauce, scraping the bottom to release browned bits.
  6. Return the beef to the pot and add potatoes, thyme, rosemary, paprika, and the bay leaf.
  7. Bring to a simmer, cover, and cook on low for 2-2.5 hours until the beef is very tender and the broth has thickened.
  8. Remove the bay leaf, taste, and adjust seasoning.
  9. Garnish with fresh parsley and serve warm.

  • Optional flour for a thicker broth (omit if you prefer a lighter soup).
  • Let the stew rest 10 minutes after cooking to meld flavors.
