  • 1 cup whole milk
  • 1 package potato gnocchi (about 16 oz)
  • 1 1/2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat butter and olive oil over medium heat. Add onion, celery, and carrots, and cook for 4–5 minutes until softened.
  2. Stir in garlic and cook for 30 seconds until fragrant.
  3. Add diced chicken, chicken broth, Italian seasoning, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat and simmer for 10 minutes to let flavors combine.
  5. Stir in heavy cream and milk, then add gnocchi. Cook for 3–4 minutes, or until gnocchi float and are tender.
  6. Add spinach and Parmesan cheese, stirring until spinach wilts and soup becomes creamy.
  7. Taste and adjust seasoning as needed. Serve warm.
