Description

  • 4 boneless skinless chicken thighs or breasts
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • ¾ cup gluten free BBQ sauce
  • 3 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup diced bell peppers
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large oven safe skillet, heat olive oil over medium heat. Season chicken with garlic powder, smoked paprika, salt, and black pepper.
  3. Sear chicken for 3–4 minutes per side until lightly golden. Remove and set aside.
  4. In the same pan, add uncooked rice, chicken broth, diced bell peppers, gluten free BBQ sauce, and honey. Stir to combine.
  5. Place seared chicken on top of the rice mixture. Spoon a little extra sauce over each piece.
  6. Cover tightly with a lid or foil and bake for 25–30 minutes until rice is tender and chicken is cooked through.
  7. Remove from oven and let rest for 5 minutes. Garnish with chopped parsley before serving.
