  • 3 cloves garlic, minced
  • 1 lb lean ground beef or ground turkey
  • 1 (24 oz) jar tomato sauce or marinara
  • 1 (15 oz) can diced tomatoes
  • 4 cups low-sodium chicken or vegetable broth
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp oregano
  • Salt and black pepper to taste
  • 68 lasagna noodles, broken into pieces
  • ½ cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until fragrant and softened.
  2. Add the ground beef or turkey, breaking it apart as it cooks. Cook until browned, then drain excess fat if needed.
  3. Stir in tomato sauce, diced tomatoes, broth, Italian seasoning, basil, oregano, salt, and pepper. Bring to a simmer.
  4. Add broken lasagna noodles and cook for 10–12 minutes, stirring occasionally, until noodles are tender.
  5. Stir in ricotta, mozzarella, and Parmesan until melted and creamy.
  6. Taste and adjust seasoning as desired.
