  • 1 cup heavy cream
  • 1½ cups shredded Pepper Jack cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and bell peppers and cook for 4–5 minutes until softened.
  2. Stir in garlic, fajita seasoning, cumin, smoked paprika, salt, and black pepper. Cook for 30 seconds until fragrant.
  3. Add chicken and chicken broth. Bring to a gentle boil.
  4. Stir in rinsed rice, reduce heat, and simmer uncovered for 18–20 minutes until rice is tender and chicken is cooked through.
  5. Remove chicken, shred it with two forks, then return it to the pot.
  6. Stir in heavy cream and shredded Pepper Jack cheese until melted and creamy.
  7. Taste and adjust seasoning as needed. Serve warm with desired garnish.
