  • Red food coloring

Instructions

  1. In a large bowl, cream together butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract and mix until combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients to form a soft dough.
  5. Divide the dough in half. Leave one half plain and mix peppermint extract and red food coloring into the other half.
  6. Roll each dough portion into equal-sized rectangles between parchment paper.
  7. Stack the red dough on top of the white dough and roll tightly into a log.
  8. Wrap and chill the dough log for 20 minutes to keep swirls sharp.
  9. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  10. Slice dough into rounds and place on baking sheets.
  11. Bake for 10–12 minutes until edges are set. Cool completely before serving.
