Instructions
- Line a round 9-inch pie pan with parchment paper or lightly grease it.
- In a large pot, melt butter over low heat. Add pumpkin purée and stir until combined.
- Add marshmallows, pumpkin pie spice, cinnamon, salt, and vanilla. Stir until marshmallows are fully melted and smooth.
- Remove from heat and quickly fold in the crispy rice cereal until fully coated.
- Press the mixture evenly into the prepared pie pan, shaping the top like a pie.
- Optional: Drizzle with melted white chocolate for extra sweetness.
- Let cool for about 30 minutes at room temperature or refrigerate to set faster.
- Slice into wedges and serve topped with whipped cream or marshmallow fluff for the full pie effect!
