Ingredients

- 5 large carrots, peeled into ribbons
- 3 cloves garlic, finely minced
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- Juice of 1 lime
- 1 teaspoon sugar (optional)
- 1 tablespoon sesame seeds, toasted
- 2 scallions, thinly sliced
Instructions
- 1. Whisk together soy sauce, rice vinegar, sesame oil, lime juice, garlic, and sugar in a mixing bowl.
- 2. Add carrot ribbons and toss to coat.
- 3. Sprinkle in sesame seeds and sliced scallions.
- 4. Mix gently until well combined.
- 5. Let the salad sit in the fridge for at least 20 minutes.
- 6. Serve chilled or at room temperature.
