  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, add butter, onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add potatoes, broth, thyme, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  4. In a small bowl, whisk flour into milk until smooth. Slowly pour into the soup, stirring to thicken.
  5. Return sausage to the pot and simmer for another 5–10 minutes until creamy and well combined.
