- 2 large sweet potatoes, peeled and diced into 1-inch cubes
- 12 oz halal sausage (chicken or turkey sausage, sliced into rounds)
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (for garnish)
Honey Garlic Sauce:
- 3 tbsp honey
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp chili flakes (optional, for heat)
Instructions
- Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
- Toss diced sweet potatoes with olive oil, salt, and pepper. Spread evenly on the sheet pan and roast for 15 minutes.
- Add sliced sausage to the pan, toss everything together, and roast for another 15 minutes until potatoes are tender and sausage is browned.
- Meanwhile, whisk together honey, soy sauce, garlic, olive oil, and chili flakes.
- Drizzle the honey garlic sauce over the roasted sausage and sweet potatoes. Toss to coat evenly and roast for 5 more minutes.
- Garnish with parsley and serve warm.
Notes
- For a spicier finish, increase the chili flakes or add a pinch of red pepper flakes.
- Halal sausage chicken or turkey variety works best for a leaner option.
- Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
- You can swap olive oil for avocado oil if desired.
