Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- In the same pot, add onion, carrots, celery, and bell pepper. Cook for 5 minutes until softened.
- Stir in garlic, Italian seasoning, paprika, salt, and pepper. Cook for 30 seconds until fragrant.
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
