  • 1 tbsp olive oil
  • lb halal chicken or beef Italian-style sausage, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, diced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 6 cups halal, gluten-free chicken broth
  • 1 can diced tomatoes
  • 2 cups zucchini, sliced
  • 2 cups fresh spinach or kale
  • Optional: grated Parmesan-style cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, add onion, carrots, celery, and bell pepper. Cook for 5 minutes until softened.
  3. Stir in garlic, Italian seasoning, paprika, salt, and pepper. Cook for 30 seconds until fragrant.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add zucchini, cooked sausage, and spinach. Cook for 5 more minutes until vegetables are tender.
  7. Taste and adjust seasoning as needed. Serve warm with optional cheese on top.
