Description

Shepherd’s Pie Soup is a cozy, creamy reinterpretation of a classic dinner—ground beef, potatoes, vegetables, and cheddar simmered in a rich beef broth with milk and cream for indulgent comfort. This family-friendly soup comes together in one pot, freezes well, and makes weeknight meals easy.   • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 3 cups beef broth
  • 1 cup milk
  • ½ cup heavy cream
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1½ cups shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Stir in onion and garlic and cook for 2-3 minutes until fragrant.
  4. Add diced potatoes, mixed vegetables, beef broth, salt, pepper, thyme, and paprika.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  6. Stir in milk and heavy cream, then simmer for 5 more minutes.
  7. Add shredded cheddar cheese and stir until melted and creamy.
  8. Taste and adjust seasoning before serving.

Notes

  • For a thicker soup, mash a portion of the potatoes before serving.
  • Leftovers freeze well; reheat gently on the stove.
  • Top each bowl with extra cheddar or chopped parsley for color.
  • To lighten the dish, use 2% milk and light cream cheese as an alternative.
