Instructions
- Finely chop shrimp into small pieces or pulse briefly in a food processor, leaving some texture.
- In a large bowl, combine chopped shrimp, breadcrumbs, egg, mayonnaise, green onions, parsley, Dijon mustard, paprika, salt, and pepper. Mix gently until combined.
- Form mixture into 6–8 small patties.
- Heat olive oil in a skillet over medium heat. Cook shrimp cakes 3–4 minutes per side until golden brown and cooked through.
- In a small bowl, whisk together mayonnaise, lemon juice, lemon zest, garlic, and salt to make the aioli.
- Serve shrimp cakes warm with lemon aioli on the side.
