  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 lb cooked shredded chicken
  • 6 cups chicken broth
  • 1 cup cooked rice (white or brown)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Optional: squeeze of lemon for brightness

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté 4–5 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth, add thyme and bay leaf, and bring to a simmer.
  5. Add shredded chicken and cooked rice. Stir and let simmer 10–12 minutes.
  6. Season with salt, pepper, and a squeeze of lemon if desired.
  7. Remove the bay leaf and garnish with fresh parsley before serving.

Notes

  • Leftover rotisserie or cooked chicken works great in this soup.
