  • 4 boneless skinless chicken breasts or thighs
  • 1 cup fresh or frozen cranberries
  • ½ cup orange juice (fresh preferred)
  • 2 tbsp orange zest
  • ¼ cup honey
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • ½ cup chicken broth
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • ½ tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh rosemary or parsley for garnish

Instructions

  1. Season the chicken with salt, pepper, paprika, and thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden, then remove and set aside.
  3. Add the onion to the same skillet and sauté for 2–3 minutes until softened. Stir in garlic and cook for 30 seconds.
  4. Add cranberries, orange juice, honey, soy sauce, orange zest, and chicken broth. Stir and bring to a simmer.
  5. Return the chicken to the skillet, nestling it into the sauce.
  6. Reduce heat to medium-low and cook for 15–20 minutes, or until the chicken is cooked through and the sauce thickens into a glossy glaze.
  7. Taste and adjust sweetness or tang if needed by adding more honey or orange juice.
  8. Garnish with fresh rosemary or parsley and serve warm over rice, mashed potatoes, or couscous.
