Description
Skillet Cranberry Orange Chicken is a bright, easy weeknight favorite with a festive flair. This 5-ingredient skillet sears chicken to golden perfection and finishes in a glossy cranberry-orange glaze. Fresh cranberries, orange zest, and honey create a sweet-tart sauce, while garlic and onion build depth. Thyme and paprika bring warmth, with a splash of broth to enrich the glaze. Perfect with rice, potatoes, or couscous for holidays or cozy dinners.
Ingredients
- 4 boneless skinless chicken breasts or thighs
- 1 cup fresh or frozen cranberries
- ½ cup orange juice (fresh preferred)
- 2 tbsp orange zest
- ¼ cup honey
- 2 cloves garlic, minced
- 1 small onion, diced
- ½ cup chicken broth
- 1 tbsp soy sauce
- 1 tsp dried thyme
- ½ tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh rosemary or parsley for garnish
Instructions
- Season the chicken with salt, pepper, paprika, and thyme.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden, then remove and set aside.
- Add the onion to the same skillet and sauté for 2–3 minutes until softened. Stir in garlic and cook for 30 seconds.
- Add cranberries, orange juice, honey, soy sauce, orange zest, and chicken broth. Stir and bring to a simmer.
- Return the chicken to the skillet, nestling it into the sauce.
- Reduce heat to medium-low and cook for 15–20 minutes, or until the chicken is cooked through and the sauce thickens into a glossy glaze.
- Taste and adjust sweetness or tang if needed by adding more honey or orange juice.
- Garnish with fresh rosemary or parsley and serve warm over rice, mashed potatoes, or couscous.
Notes
- You can substitute chicken thighs for breasts for juicier results.
- For gluten-free option, use gluten-free soy sauce.
- If sauce is too thin, simmer a few minutes longer to thicken.
- Leftovers reheat well; store in an airtight container.
- Pair with rice, mashed potatoes, or couscous for a complete meal.
